1Pre-heat your oven to 180°C degrees (fan-forced).
2Place parchment paper on 2 baking trays and set aside.
3In a large mixing bowl combine the yoghurt, flour, sugar and salt. Using your hands, mix all of the ingredients and knead until all of the mixture comes together while still in the bowl.
4On a lightly floured (clean) bench top, knead the mixture for 5-10 minutes until the dough becomes smooth.
5Divide into 8 equal balls (ideally if you weigh the balls to the same weight, they will all be the same size)
6Roll each ball into a smooth sphere. Using your fingers, poke a hole in the middle of the sphere then push 4 fingers through the bagel hole. Roll with your hand while the dough is around your fingers. Ideally you want the dough to be 1.5cm wide and the hole of the bagels to be 3-4 fingers wide. At this point the dough will look like a small tyre and not a bagel, however once baked the shape will form.
7Place 4 bagels to a baking tray and brush with egg white using a pastry brush. Sprinkle with your favourite bagel toppings. These bagels pair perfectly with an equal mix of G-Fresh Black Sesame Seeds, traditional Sesame Seeds and Poppy Seeds.
8Bake in the oven for 25 minutes, making sure to turn the trays and rotate the trays half-way through.
9Leave to cool for at least 15 minutes before cutting.
