Pan-Seared Whiting with Pea Purée and Roasted Potatoes

1Preheat your oven to 180°C (fan forced).

2Chop the potatoes into medium-sized cubes and place onto a flat parchment lined baking tray. Drizzle with 1/2 cup olive oil and the juice of half a lemon.

3Sprinkle the potatoes with G-Fresh Mediterranean Seasoning, then season with G-Fresh Atlantic Sea Salt and G-Fresh Black Pepper. Mix the seasoning through well with your hands and bake in the oven for approximately 30-40 minutes on the middle shelf. You can adjust the cooking time depending on your preferred crunch factor.

4Meanwhile, cook your peas in a microwave for 2-3 minutes ensuring the peas are defrosted and warm. Reserve a few whole peas for presentation. Place peas into a larger bowl, add cream and blitz with an immersion blender till smooth. Pass the purée through a fine sieve, to remove any lumps. Season with salt and pepper, cover and set aside.

5In a skillet pan, heat a few drizzles of olive oil and cook garlic until fragrant. Place your fish fillets in the pan, sprinkled generously with G-Fresh Fish Seasoning and the juice of half a lemon. Cook the fish through (approximately 2-3 minutes on each side). Once fish is cooked on one side, add a sprinkle of fresh parsley to the pan.

6Assemble your dish by smearing the pea purée on your chosen plate and topping it with the fish fillets. Place the roasted potatoes next to the fillets and sprinkle your reserved peas on the plate. Finish with some fresh parsley.



6 fillets Yellowfin Whiting (3 whole fish)

6 large white, washed potatoes

1 cup frozen peas

½ cup thickened cream

1 lemon

G-Fresh Fish Seasoning

1 large clove of garlic

G-Fresh Mediterranean Seasoning

Fresh parsley

G-Fresh Atlantic Sea Salt

G-Fresh Black Pepper

Olive oil
