This delicious G-Fresh recipe was created for Season 4 of Adelady TV, Channel Nine.

  • Prep: 20 mins
  • Cook: 20 mins
  • Serves: 2 people

1Preheat oven to 180°C.

2In a small mixing bowl, add sesame oil, soy sauce, G-Fresh Herb and Garlic Seasoning, sprinkle of Crushed Chillies, Minced Ginger and coriander, and mix well.

3In two pieces of foil, place the barramundi fillet in the middle and lift up the sides (like a boat).

4Divide the soy mixture between the two fillets of fish and then wrap up, to enclose the fish and fresh coriander on top.

5Place into the oven to bake for 20 minutes, or until cooked to your liking.

6Place all dressing ingredients into a small bowl and mix well.

7Place all salad ingredients into a bowl and toss well. Pour the dressing over the top and toss again.

8Pair with the cooked fish, add some more coriander… and eat.
