Raw Zucchini Salad

Main ingredients
 1 large zucchini (shredded -- about 3 cups)
 1 red capsicum (julienned)
 1 carrot (shredded)
 2-3 steamed green onions (green and white parts chopped)
 1/4 cup coriander (chopped)
 1-2 tbs G-Fresh Sesame Seeds (or add more to your liking).
 1 cup baby spinach leaves
Optional: garnish salad with nuts (including peanuts and slivered almonds).
Ginger sauce
 1 tbs soy sauce
 1 tbs rice wine vinegar
 1 tbs sesame oil
 1 tsp G-Fresh Ginger (Minced)
 1 tsp G-Fresh Garlic (Minced)
 Juice of 1/2 fresh lime
 G-Fresh Pink Himalayan Salt and G-Fresh Black Pepper (to taste)

Using a spiraliser, thread the zucchini and carrot. Place the spiralled zucchini in a colander and allow to drain for about 30 minutes.

Slice the capsicum really thin. Combine the zucchini, carrot, capsicum, baby spinach leaves and coriander in a medium bowl. Set aside.

In a small bowl, mix sesame-ginger sauce ingredients and set aside.

When ready to serve the salad, add the sesame-ginger sauce to the zucchini mixture. Season with G-Fresh Salt and Pepper. Serve immediately and sprinkle with additional sesame seeds and nuts.
