Seared Salmon with Tomato & Avocado Salsa

GFresh products: Fish Seasoning 120g
Coriander Leaves 15g
Sea Salt 230g

 
Ingredients: 4 salmon fillets
GFresh Fish Seasoning
oil for frying
Salsa
1 large ripe avocado
4 ripe roma tomatoes diced
½ red onion finely chopped
1 tsp GFresh Coriander Leaves
Juice and grated rind of 1 lime
½ tsp GFresh Chilli Flakes
2 tsp Thai Fish Sauce
2 tbsp olive oil
Ground GFresh Sea Salt to taste

 
Method:
Generously sprinkle salmon with GFresh Fish Seasoning. Allow to marinade for 30 mins. Heat a non stick frying pan, then add oil. Fry fillets for three minutes on each side. For thicker cuts reduce to a medium heat and cook for seven mins.

Salsa : Halve the avocado and remove the pip. Remove skin and chop into 1cm chunks. Place in a mixing bowl and add the other salsa ingredients. Mix well and leave at room temperature for 10 mins.

To serve place salsa in centre
of each plate and top with seared salmon fillets
