Roast Lamb Cutlets with Lemon Potatoes

GFresh products: Greek Seasoning 100g
Herb & Garlic Seasoning 80g
Lemon Pepper 90g
Sea Salt 230g

 
Ingredients: 1 rack of lamb
6 cloves of garlic, peeled and halved
½ cup olive oil
2 tbsp finely grated lemon rind
1/3 cup lemon juice
1 tbsp GFresh Greek Seasoning
GFresh Sea Salt and Cracked Pepper
12 Medium Potatoes

Lemon Potato Mixture
½ cup Olive Oil
1/2 cup Lemon Juice
1 tbsp GFresh Herb & Garlic Seasoning
½ tbsp GFresh Lemon Pepper

 
Method:
Combine oil,garlic, lemon rind, lemon juice and GFresh Tuscan Seasoning in a jug. Mix well.

Trim excess fat from lamb. Pour mixture over lamb. Season with GFresh Sea Salt and GFresh Cracked Pepper, cover and refrigerate for several hours overnight.

Lemon Potatoes: Cut potatoes into halves. Place in a bowl, pour lemon potato mixture over mix well. Arrange potatoes evenly around lamb in dish. Cover dish with foil. Cook in a moderately slow oven at 160°C for 75 mins.

Uncover dish cook in a hot oven at 200°C for a further 15 mins or until
lamb is tender and well browned.
